The appointment of Chef Pete Dale and his wife, hospitality expert Laura, is set to take the daytime menu and service at the popular café Jack Rabbits to new levels.
Formally of Ashbourne’s award wining restaurant ‘The Dining Room,” Pete and Laura have a wealth of experience running highly successful food businesses.
“We are already preparing for the exciting developments planned over the coming months and moving the food side of the business forward in a creative way, without detracting from what already makes Jack Rabbits so successful. We have made a few tweaks to the existing menu and added some twists to regular favourites. Dishes such as Sun Blushed Tomato Macaroni Cheese and Croque Monsieru Benedict are now regulars on our all day menu.” says Pete

We are looking to bring the refinement, service standards and amazing quality ingredients from the Dining room into a more relaxed casual dining experience of Jack Rabbits. ” Adds Laura
Jack Rabbits offers an all day menu, which includes hand-roasted coffee, fabulous brunch favourites, lunches with continental twists, homemade cakes, exquisite wines and local beers. They pride themselves on baking their own bread, cakes and biscuits in house and its team of skilled chefs work hard to deliver delicious baked goods everyday.
